On the go with kids this summer? Have trouble getting your kids to eat breakfast, or run out of time to prepare a good meal? Here are some great ideas for smart and easy summer breakfasts that can double as snacks, any time of day. They’re easy to fix and can even be eaten in the car in a pinch!
Bananas on a stick
While it might be easier just to hand your kids a banana (since they come in their own handy package), what could be more fun than putting it on a stick? Cut a ripe banana in half and insert an ice pop stick into the banana, then roll it lengthwise in granola, trail mix, crushed toasted almonds or dried coconut flakes for a fun outer coating that adds crunch as well as nutrition. Kids will love it, and never know they're enjoying potassium, magnesium, vitamin B6 and other nutrients.
Toast two frozen waffles, then let them cool a bit before spreading with almond butter and jam or jelly. Spread sparingly and not all the way to the edges, so it will be less messy to eat on the go. Make the waffles into a sandwich. Cut into halves or quarters to make it easier for little ones to hold.

Frozen fruit pops
Create your own tasty and healthy frozen pops using one or more types of fruit juice and add a little crushed fresh fruit to the mix before freezing. You can find many types and sizes of easy-to-use ice pop molds at local stores or online. Choose berries and 100% juice (not a "juice drink") that contains plenty of vitamin C and other nutrients for a frozen treat your kids will love.
For a protein boost in the morning (or any time), cook your family's favorite breakfast sausages, then roll each sausage up in a pancake or a piece of French toast. Use microwavable frozen pancakes if you're pressed for time. Secure each one with decorative toothpicks to make it easier to eat on the go. If you're home kids can dip them in syrup, or they can eat them as is in the car.
Pocket or roll-up sandwich
Use either half of a piece of pita bread or a soft tortilla to serve as the "bread" for your sandwich. Choose a filling like egg salad, tuna salad or almond butter and sliced bananas and spread it (but not too full!) in the pita or tortilla. Roll up the tortilla and secure with toothpicks or wrap 2/3 of it in foil to make it easier to eat on the go. Add some chopped veggies to your protein-rich egg or tuna salad to make it even more nutritious.
Pretzel stick kebabs
Use thin pretzel sticks to skewer cubes of soft cheese, berries or melon balls to create fun, colorful kebabs to snack on, at home or on the go — any time of day. Let kids assemble their own creations with a variety of cheeses and fruits, and rest easy knowing that they're getting nutrients while they're having fun making their own snacks.
